小炒荷兰豆(配香肠&豆干)Chinese Snow Pea in Smoked Sausage and Fired Tofu

这道菜特别适合紧张的上班族,晚上回家来,拿出冰箱里的荷兰豆,花上几分钟,撕掉背部的硬茎,冲冲干净,薰香肠和豆干切好,下锅里微爆,香味透出,淋上点老抽,又是酱香扑鼻,这时候再加荷兰豆,来回几下,撒盐调味,勾玻璃芡,就成了。关键是荷兰豆不能烹调得过久,吃起来时脆脆的,才最好。你会了吗?呵呵

雪菜豆腐–Tofu

这道菜是妈妈掌锅的,我准备原料。李锦记的雪菜,味道鲜得很,只是稍微有点咸,豆腐就不需要放盐了。切碎了,抓干水。一盒嫩豆腐,剖成两层,再切成中等大小的方块,放在盘子里,稍等一会儿,里面的水就会流出来,差不多了,就滗掉,这样子豆腐就不会有水味道。锅里放少少油,豆腐块两面煎黄,下雪菜,四周淋上少许汤,焖上盖子烧一会儿,勾薄芡就行了。还是不要撒葱花了,因为很多的报道都说,这两样是不相宜的,葱花会影响豆腐中钙质的吸收。

凉拌黄豆芽 Soy Bean Sprouts Salad

每天吃8粒黄豆,就能保证充足的钙质。这样的说法,你相信吗?黄豆芽比黄豆更加有营养,因为黄豆芽是有生命的黄豆孕育的孩子,有朝气,哈哈!听说加了醋来吃的黄豆芽,更有利于维生素C的吸收。。。各种医学上的推断,暂且不论,黄豆芽是一道需要断豆腥味,然后才会味道鲜美的菜。今天晚上我做的是凉拌,不过这个凉拌的黄豆芽,可需要焯水很简单,锅里烧开水,下摘掉须根的黄豆芽,然后洒入适当的盐,煮约1到2分钟,捞起来,剩下的水可千万要留着,因为那是最好的素高汤,可以留着下面条吃。沥干水的黄豆芽,可以调上各种佐料,比如蒜泥,姜米,辣椒。。。不过我只要醋和香油,最后洒上葱花,Hmmnnn,尝一筷,不错!

番茄蛋汤 Tomato soup

今天中午没有汤,要赶时间,满足咕咕叫的肚子,就有了这个菜。很久前,看过一部电视剧,说的是一群在澳大利亚的中国人的故事,有一幕,提到番茄蛋汤,有一个很美的名字,叫彩云追月,很形象,只是我还没有那种高超厨艺,怎么看都美不起来,于是放了几片芹菜叶子,绿叶配红花算了。
